Sharing with you some personal recipes that will often be found on Chumie's Shabbos table!
- Preheat the oven to 425.
- Mix eggs, oil, salt and pepper in a large mixing bowl. Set aside.
- Peel potatoes and onions. Shred them in food processor on a fine setting with an S blade. Add pureed potatoes and onions to the egg mixture.
- Bake in a 9x13 pan (I use pyrex for no stick) for 45 minutes or until the top is a golden brown. Lower the oven to 350 and bake an additional 30-40 minutes.
Chumie’s Potato Kugel
One of the best parts about Erev Shabbos in the Vann home is the sweet smell of this delicious kugel in the oven… and eating most of it straight out of the oven before Shabbos even begins!
- 8 medium sized golden potatoes
- 2 medium sized onions
- 6 eggs
- 1/2 cup canola oil
- 1 tablespoon of salt
- Pepper to taste
